“So Tight” Queso
A blend of cheeses mixed with fresh spices, peppers, tomatoes

Miniature Quesadillas
Fresh baked flour or corn tortillas cooked with your choice of beef, shrimp, chicken or cheese

Vegetable Tray
An arrangement of carrots, celery, cucumbers, broccoli, and cherry tomatoes served with blue cheese and ranch

Fruit Tray
A variety of fresh fruits with a creamy romanoff sauce (fruits and prices vary with seasons)

Domestic and Imported Cheese Tray
Cheddar, Swiss, Provolone, and Pepper Jack Cheeses with a setting of Havarti Dill, saltine and butter crackers

Cold Cut and Cheese Combination
An ample selection of turkey, ham, roast beef, cheddar, Swiss, provolone and pepper Jack cheeses set alongside white and wheat rolls, lettuce, tomatoes and a choice of potato chips or pasta salad

The Real Ceviche also with shrimp
A mixture of tomatoes, carrots, cilantro, lime juice, fish, and other seasonings that will leave your taste buds tantalized. Served with saltine crackers or tortilla chips

Crab Salad
Finely chopped celery, onions and tomatoes tossed in our special sauce, served with saltine crackers

Cocktail Shrimp
Freshly peeled shrimp arranged on a platter surrounding a bowl of our famous cocktail sauce

 

Seafood Entrées ($20-$35 -prices vary with season)
All seafood Entrées served with a side of rice mixed with crab, shrimp and octopus; also served with black bean mango sauce. House salads are included in table service. (Substitutions available if desired)

Grilled or Blackened Mahi Mahi
Fresh Mahi Mahi grilled for mild flavor or blackened to spice it up. A truly great dish

Slowly Seared Salmon
A 7 to 8 ounce salmon steak seasoned and slow cooked to perfection

Grilled Tuna Steak
This Tuna steak will melt in your mouth

Baked or Grilled Flounder
A 7 to 8 ounce portion seasoned in our wine and lemon marinade

Catfish
Batter dipped and deep fried planks of catfish served with tarter sauce

Sautéed Tilapia
Thinly sliced tilapia fillets marinated in a mojo crillo sauce

Crab Stuffed Jumbo Shrimp
5 hearty shrimp stuffed with mozzarella cheese and crab, then tightly wrapped in bacon and prepared how you like it

 

Mexican Entrées ($13-$20)
All Mexican dishes are served with tortilla chips, salsa, Spanish rice and a choice of refried beans or boracho bean soup

Shrimp Enchiladas
Shrimp and Monterey Jack cheese rolled in either corn or flour tortillas and baked to perfection in a tomatillo sauce and topped with sour cream. Delicious

Green Chile Enchiladas Verde
Seasoned chicken rolled in a corn or flour tortilla topped with cheese and tomatillo sauce, baked and garnished with sour cream and green chile.

Quesadillas
Your choice of Cheese, Beef, Chicken or Shrimp and a mixture of Pepper Jack, Cheddar, Monterey Jack and Asadero cheeses grilled in a flour tortilla

Fajitas
Marinated beef, chicken or mixed fajita strips grilled over an open flame and served with grilled onions

A steak lovers favorite: A tender 8 ounce portion, marinated and prepared on an open flame grill, cooked to your preference

New York Strip
A 10 ounce strip cooked over mesquite coals with our secret blend of seasonings that will nip at your taste buds

Texas Sirloin
A fabulous 12 ounce steak seasoned with herbs and spices, for a bold Texas taste.

Providence Hills Prime Rib
Prepared one of two ways: Prime Rib cut straight off the rib roast or have it blackened for a spicy experience

Slowly Smoked Roast Beef
Oh so good! A mouthwatering treat that will melt in your mouth comes pre-sliced or have an optional carving station set up
